Thin corn semolina to make polenta, from ancient corn called Sponcio, multiplied and cultivated on the farm. The Sponcio variety originates from the Italian Alps, the birthplace of polenta. Milled on the farm on a stone millstone, it produces an intense yellow semolina and flour. On the farm, it is an ancient cultivated variety, classified as endangered in its country of origin.
